Three fantastic facilitators – Olivia Bellas and Jacqui Scott (Researchers, University of Adelaide, Supportive Oncology Group) and Remedy Bliss (Raw and Fermented Foods Educator and Producer), will lead you through a series of interactive sessions to explore the mysteries and magic of our amazing ‘gut microbiota’ and the process of fermentation as one way we can create a healthy gut. 10.00 Welcome, Introductions and Setting the scene activity
10.30 Session 1: An Introduction to the Mysteries and Magic of our Amazing Gut Microbiota
As part of their presentation Olivia and Jacqui will explore the following topics:
- What do we mean by ‘Gut Microbiota’?
- The importance of ‘gut micobiota’ to our gut health and immune system.
- The impact of antibiotics and cancer treatment on our ‘gut microbiota’.
- Strategies that support good gut health.
After their formal presentation, Olivia and Jacqui will facilitate an informal conversation so that participants can ask lots of questions of interest to them.

12.45 Session 2: The Joys of Fermentation
In this session, Remedy will cover the following topics:
- What defines a ‘fermented food’.
- Why are these foods so helpful to your overall wellbeing.
- What equipment and ingredients you need to start creating fermented products.
- How to prepare a jar of fermented vegetables.
- How do you know when your ferments are ready and how long do they last.
Remedy will also bring along some of her fermented products to taste test during the session.

ABOUT OLIVIA BELLAS
Olivia Bellas is a PhD candidate at the University of Adelaide within the Supportive Oncology Research Group. Her research focuses on the neuropsychological complications of chemotherapy, specifically exploring the role of the body’s internal cannabinoid system, the endocannabinoid system (ECS). Olivia aims to understand how chemotherapy-induced symptoms—such as brain fog, fatigue, depression, and anxiety—are influenced by changes in the ECS.
ABOUT JACQUI SCOTT
Jacqui Scott is a PhD student at the University of Adelaide, South Australia. In a collaborative project with the Myeloma Research Laboratory and Supportive Oncology Research Group, Jacqui has been working to improve the quality of life of people living with myeloma, through investigation into the mechanisms underpinning side effects of standard-of-care drug, bortezomib. With an interest in microbiome science, Jacqui is exploring how the gut microbiota contribute to these side effects, providing evidence to develop and test novel microbial biotherapeutics as supportive care interventions for people with myeloma.
ABOUT REMEDY BLISS
Remedy produces a large range of raw and fermented foods and drinks with her sister Kristy which they sell at the Willunga and Wayville Farmers’ Markets.
After studying the practice of raw and fermented food preparation in Patagonia, Arizona, USA in 2007, Remedy came back to hometown Adelaide excited and ready to share this knowledge with as many people as possible!
For Remedy, food and its preparation must be simple and accessible. It must stand the test of time, it must cross generations and backgrounds, it must be of value to the planet.
